PRODUCTION PROCESS DESCRIPTION

The milk, collected daily from the farms in the area, once it arrives at the company, undergoes the pasteurization heat treatment and is placed in refrigerated silos; subsequently through pipes it is sent to the polyvalent where, with the addition of citric acid or lactic acid, and rennet, the milk acidification and curdling processes take place.

The curd, obtained through the coagulation of the milk, is left to drain into the vats and subsequently cut into pieces and placed in the spinning machines, where by means of a mechanical process the spinning and then the shaping of the product to be obtained is obtained.

In the draining of the curd there is separation from the whey, which sent to the skimmer, separates it, giving rise to cream and skimmed whey which is stored in insulated silos and sold to the DPI Dairy Powder Ingredients S.r.l. for later use.

The finished pasta filata product is placed in cooling trolleys, where the presence of cold water makes it suitable for packaging; while the hard paste finished product, after cooling, is immersed in vats of brine where it undergoes the salting process.

The cooling water is subsequently subjected to the skimming process and then deposited in the insulated silos, to then be sold to livestock companies for livestock feed.

The finished stretched curd product is packaged in trays with preserving liquid (spring water) and loaded into special refrigerated vans for distribution or stored in refrigerated cells.

DESCRIPTION OF THE BUILDING

On the ground floor there are:

undivided departments, in order to allow the continuity of the processes of: milk curdling, whey skimming, dairy products production and butter production, product cooling, salting, packaging and storage in refrigeration cells and storage of products.
preload product parking area, separated by a panel from the processing and storage area; finished product loading area, separated from the preloading area by a folding door; utensils and crates washing area.
In the basement there are:

storage rooms for hard paste finished products, products smoking area with boiler and smoking room, finished products packaging area; the areas are separated by a suitable panel, from the rooms used for packaging storage and adjuvant storage, and the refrigeration unit.
Externally on the ground floor there are:

milk unloading and whey loading area, where there are insulated silos, waste storage area similar to urban waste and finished products loading area.
Outside the basement there are:

biological purifier, managed internally with maintenance and assistance by an external company, ENEL cabin, control panel cabin and boiler room

STRUCTURAL NOTES

Lighting is guaranteed by perimeter windows with mosquito nets and suitable lamps
The water supply is provided regularly by AQP
Waste is disposed of with municipal authorization, similar to urban waste in a differentiated way. Sludge, tanks and special through external disposal.
The risks connected to the production cycle are managed through detection pursuant to Legislative Decree 81/08 and subsequent amendments with the form DOC 01 – REV 0 of 15/07/2015 complete with all the DVRs as required by law drawn up by a qualified technician.
The company does not produce hazardous waste, and as mentioned above, the waste is held in well-defined areas
For the washing of machines and equipment present in the production process, water from AQP is used, the same are collected and sent to the biological purifier present in the company, where after the purification treatment we obtain: purified water that is discharged into the AQP sewer, and sludge purification that are disposed of with a form from an external company.
